Rice Pudding

Rice Pudding

Super quick dessert or breakfast- in the Instant Pot
Prep Time 5 minutes
Cook Time 30 minutes

Ingredients
  

  • 2/3 Cup Sticky Rice I know, not traditional at all
  • 4 Cups Soy Milk
  • 1/4 Cup Maple Syrup or brown sugar
  • 1/2 tsp Ginger Ground
  • 3/4 tsp Cinnamon Ground
  • 1 tsp Vanilla
  • 1/2 tsp Salt
  • 1/2 tsp Cardamon Ground

Notes

Wash rice well, add to instant pot with all other ingredients and stir.
Cook at high pressure for 8 minutes and do a 10 minute release.
Let sit for a few moments to thicken.
Stir in nuts, seed, sweetener (if you’d like), chia and flax.
 
Note, if you make with regular basmati rice, reduce soy milk to 3 cups.
It will thicken if not eaten right away, add soy milk to thin and re-heat.
