Holiday Beets

This has been our go-to holiday potluck dish for years. The original recipe is from the cookbook ‘The Clueless Vegetarian’ and was entitled ‘Sweet and Sour Roasted Beet Salad’ which I don’t actually think is a very accurate description of flavour.

  • 1 lb beets- peeled and chopped
  • 2 TBSP water
  • 2 TBSP Balsamic Vinegar
  • 1/8-1/4 Cup Olive Oil
  • Finely chopped red onion or shallot
  • 2 Garlic Crushed
  • Salt and Pepper

Cover and bake for 1.5 hours at 350 degrees.
