Tahini/Peanut Butter Cookie

Servings 36 Cookies

Ingredients
  

  • ½ Cup Natural Peanut Butter Smooth
  • ½ Cup Tahini
  • 1 Cup Coconut Sugar
  • ¼ Cup Soy Milk Add up to another 1/4 cup if necessary
  • 2 tsp Vanilla
  • ¼ Cup Millet Optional
  • 1 Cup Flour
  • 2 tsp Baking Soda
  • 1 tsp Salt adjust if peanut butter is salted

Instructions
 

  • Preheat oven to 350
  • With a standing mixer, butter together the peanut butter, tahini and sugar.
  • Add in milk and vanilla and beat until well mixed.
  • Mix in the remainder of ingredients.
  • Make 36 one-tablespoon balls (roll with your hands) and lightly flatten with a fork.
  • Bake for 12-ish minutes and move to a cooling rack.
  • Note: you'll have to add more milk if the tahini is on the thicker side. I tend to use the runnier tahini.
